Diet and Markers of Ethnicity in the Historical Zooarchaeology of Rosario, Argentina: A Preliminary Assessment

Abstract.
Historical zooarchaeology provides a means to investigate various lines of research related to food and ethnicity.
This article presents a preliminary assessment of dietary evidence of interaction between immigrants and native populations using collections from three archaeological sites in the city of Rosario, Santa Fe (Argentina), all dated between the eighteenth and nineteenth centuries: Casa Parroquial, Juan Manuel de Rosas and La Basurita.
There was a major influx of immigrants into Rosario into the mid-nineteenth century, a process we hypothesize should be reflected in changes in both the species consumed and methods of food preparation.
