Carteia and the Production of Roman Sauces and Salted Fish in the Strait of Gibraltar

Abstract
This paper presents the main archaeological studies undertaken in relation to the production of Roman salted fish in Carteia (San Roque, Cadiz). All the salted fish facilities (cetariae) documented in the city are examined, and this confirms that Carteia was not only a strategic and commercial point of reference, but also an important center for the production of sauces and salted fish throughout the Roman period.
